Sweet Potato Quiche
Now that kids are back in school and all the after school activities are in full swing, quick and easy dinners become key! Sweet Potato Quiche is a family favorite around here. I love to serve it for an easy dinner, reheat it for breakfast, or bring it to a Sunday brunch. I recommend making it on the weekend so you can just pop it in the oven and reheat when needed. My family enjoys quiche with a side salad and avocado toast, sprinkled with Everything but the Bagel Spice. Sooo good!
Veggie Packed Meatballs
Over the last few months I have created a new habit of thinking around plants. Each meal I prepare I ask myself, “What plants can I ADD to our family meal?” To learn more about how I created this habit and why, check out my recent post, “Looking to Optimize your Family’s Health? Spinach Mac and Cheese
I’m always thinking of ways to add more veggies into my girl’s diet. Mac and Cheese, a popular meal amongst many kids, is a great gateway to incorporating more veggies. The green sauce makes this dish extra fun and perfect for a Saint Patrick’s Day celebration. Spinach Mac and Cheese is loaded with spinach, broccoli, peas, and shredded zucchini. I went with the green theme because it is March but there are so many possibilities! Looking for more recipes with green veggies? Easy Roasted Root Veggies
There are many reasons why I love fall but one of them is for all the delicious, colorful, rooted veggies I can buy at the farmers markets. I make a big batch of rooted veggies every week in hopes of it lasting for several meals, but they usually go much quicker than that because my whole family loves them!
