Mango Sorbet
Summer is almost here and the hot weather is upon us which means lots of frozen sorbet in our family! I love to make our own sorbet because it is quick, simple, delicious, and nutritious with only two to three ingredients. We have tried several different kinds so far including Blueberry Mango, Strawberry Mango, Mango, and Pineapple. The winner thus far is Strawberry Mango with Mango coming in a close second!
To make the sorbet I recommend using full fat, canned coconut (ideally with a BPA free lining). Using the coconut milk helps to make the sorbet extra creamy, similar to soft serve frozen yogurt. I also like the fat in the coconut milk to help reduce the blood sugar spike. We love to top with cacao nibs and shredded coconut for an added crunch.

Cacao nibs are small pieces of crushed cacao beans that have a bitter, chocolatey flavor. They contain a good amount of healthy fat, fiber, and protein. Below is the basic Mango Sorbet recipe but it is easy to adapt to your preferences and what you have in the fridge. I recommend just adding a little milk at a time until you get your desired consistency. Have fun with it and enjoy a healthy treat!
Mango Sorbet
Ingredients:
2 cups frozen mango chunks
1/2 cup full fat canned coconut milk (I used 1/4 cup of cream from the top and 1/4 cup of milk)
cacao nibs and shredded coconut for a fun topping (optional)
Directions:
Add the fruit and milk into the blender. Blend until desired consistency.
Top with cacao nibs and shredded coconut.
