Shredded Carrot Salad

I remember my mom making a similar version of this Carrot Salad all summer long for my sisters and I when we were younger. I love this salad because it reminds me of my childhood and it is also refreshing, delicious, kid-friendly, and a great way to enjoy carrots! Shredded Carrot Salad has a nice natural sweetened from the carrots, as well as the apples and raisins and it is loaded with fiber and healthy fat. I recommend serving it with grilled chicken and Sweet Potato Salad or along side your favorite burger and homemade baked fries.

A couple of tips to keep in mind while you are making Shredded Carrot Salad is to keep the peel on. A lot of the fiber is in the peel. This tip goes for any fruit or veggie. Ideally you want to eat them with the peel. I like making Shredded Carrot Salad with the rainbow colored carrots for more plant variety and color. The more plant variety we have in our diet the better. Research shows for optimal health, we should all be consuming 30 different plants each week. Ingredients:

4 carrots, grated

2 apples, grated

2 tablespoons extra virgin olive oil

1 lemon, squeezed

1/4 cup raisins

1/2 cup sunflower seeds

salt to taste

Directions:
