Green Deviled Eggs
In honor of St. Patrick’s Day and Dr. Seuss’s birthday I have been having fun playing around with different ways to make foods green naturally, using veggies! We have been making a lot of rainbows with fruits and veggies this month too which is always a hit with my two girls. Who doesn’t enjoy a pretty rainbow? Did you know that eggs are nutrient dense, and contain a good source of omega 3 fatty acids, if you buy pasture raised eggs? They also contain choline (an essential nutrient, that many of us are deficient in) and are fairly high in quality animal protein containing all the essential amino acids important for human health. Green Deviled Eggs seemed like a great way to pack in the protein, get in some healthy fat and fiber from the avocado, and enjoy green food. This recipe is simple, quick, and a great recipe to get the kids involved. Even little ones can enjoy mashing, adding a little salt, tasting to see if it needs more (a very important job) and garnishing with parsley.
Green Deviled Eggs
Ingredients:
4 hard-boiled eggs
1/2 ripe avocado
1 tablespoon avocado oil- based mayo (I like Primal Kitchen or Chosen Foods)
juice from 1/2 a lime
salt and pepper to taste
fresh parsley or scallions as a garnish (optional)
Directions:
Peel hard boiled eggs and cut in half the long way.
scoop out the yolk and add to a small bowl.
Add avocado, mayo, and lime juice in the small bowl. Mash until uniform.
salt and pepper to taste.
Scoop and gently place into the egg whites.
Top with fresh parsley, scallions, or garnish of choice.
