Shredded Carrot Salad

I remember my mom making a similar version of this Carrot Salad all summer long for my sisters and I when we were younger. I love this salad because it reminds me of my childhood and it is also refreshing, delicious, kid-friendly, and a great way to enjoy carrots! Shredded Carrot Salad has a nice natural sweetened from the carrots, as well as the apples and raisins and it is loaded with fiber and healthy fat. I recommend serving it with grilled chicken and Sweet Potato Salad or along side your favorite burger and homemade baked fries.

A couple of tips to keep in mind while you are making Shredded Carrot Salad is to keep the peel on. A lot of the fiber is in the peel. This tip goes for any fruit or veggie. 4 carrots, grated

2 apples, grated

2 tablespoons extra virgin olive oil

1 lemon, squeezed

1/4 cup raisins

1/2 cup sunflower seeds

salt to taste
