Sweet Potato Salad

Looking for a delicious and nutritious salad to bring to summer gatherings? This Sweet Potato Salad is a go to for me and is well loved by many! We made this salad in Kids in the Kitchen (our virtual kid’s cooking classes) and all of the chefs really enjoyed it which is a definite success in my book. I love the sweet potato for a fun twist on traditional potato salads.

Benefits to sweet potatoes:

Sweet potatoes are a starchy root vegetable that are high in fiber, vitamins, minerals and antioxidants. The fiber feeds the good bacteria in our gut. The healthier our “good” bacteria is, the more they proliferate, the healthier we are. Seventy to eighty percent of our immune system resides in our gut, so taking care of our “good” bacteria is important.  Sweet Potatoes are also rich in beta-carotene which is important for eye health.

I recommend using an avocado oil based mayonnaise like Primal Kitchen or Chosen foods as most mayonnaise is made with canola or soybean oil which are pro inflammatory. To learn more about why I try to reduce these oils check out “What are seed oils and what we should know.”

Ingredients:

2 large white potatoes, peeled and cut

2 large sweet potatoes, peeled and cut

4 eggs, hardboiled and peeled

¼ cup avocado oil based mayonnaise (I like Primal kitchen or Chosen Foods)

1 ½ tablespoons extra virgin olive oil

1 teaspoon mustard

Salt and pepper to taste

¼ cup fresh parsley

2 scallions, chopped

1 tablespoon dill

2 Pickle spears, chopped

1/2 teaspoon paprika

Directions:

  1. Carefully place potatoes into boiling water. 

  2. Cook for about 10 minutes or until you can easily poke a potato with a fork.

  3. Add mayo, oil, and mustard into a small bowl and mixing until uniform.

  4. Add all the ingredients into a bowl and stir in mayo dressing. 

  5. Garnish with scallions and sprinkle with paprika.
